The Highland is native to the Highlands of Scotland, and is characterized by its long lyre-shaped horns and its long coat which can be of different colors: white, black, red, yellow, wolf, brindle and gray.

La Ferme du Far, named after the Pic du Far behind the farm, respects the life cycle of animals and the land.
The herd, made up of about ten mother cows, grazes most of the year in the moors, woods and meadows around the small village of Auzat.
Hikers going to the Pic du Montcalm via the Chemin des Tables will be able to admire some of these beautiful Scottish cows transhumant in the summer on the Pla Subra sector. Splendid !
The challenge for the 2 breeders is both landscaping and taste: they are keen to reopen pastures that have become moors and woods over the past 50 years, and to make you enjoy high quality beef.
The production :
Highland cattle are raised for 3.5 to 4 years, which gives them a very fine grain of meat. The breeding, entirely natural, testifies to a meat which has a lot of tenacity and allows a long maturation, pledge of tenderness.
Highland beef is renowned for its exceptional qualities: tender, tasty, marbled, rich in fatty acids (omega 3) and low in cholesterol.
They regularly offer matured meat and 100% pure beef charcuterie in packages and at retail.
The packages are ready on predefined dates and can be picked up directly from the farm or delivered to your home depending on the sector.
